500g granulated sugar

Directions

To prepare the Citrus Syrup: Place all the items in a saucepan, heat until it reaches a gentle boil, agitating so the sugar melts. Then, take off the heat and leave to cool completely. Transfer into a sealable bottle, cap it and refrigerate it in the refrigerator, it will last for around a month.

To make Premix: Pour the specified liquid ingredients into one large bottle, allow it to infuse for 60 minutes, then pass it through best through a fine cloth, to ensure it's perfectly clear.

When ready to serve: Measure 85ml from the cocktail base to a stirring glass filled with ice, and agitate carefully for about 60 seconds to cool it down. Filter to a chilled martini glass or equivalent, decorate with a few cranberries adding the final touch using a quick spritz with the mandarin essence above the glass.
